¡Que viva el pulque! / Long Live Pulque! is a bilingual book written by Juan Escalona, published by NOVO Editorial and designed by e+e (Emilio Ferrer & Erandi Vera). It emerges from a collective effort aimed at exploring the identity and nature of pulque as a living beverage. The project seeks to document and reinterpret pulque from a contemporary perspective, addressing its history, biological processes, and cultural relevance within Mexican gastronomy.

The book features texts by Juan Escalona Meléndez, César Iván Ojeda Linares and Michael Snyder; illustrations by Aldo Domínguez and Lucía Sarabia; and photography by Ana Lorenzana. It’s typeset in HAL Timezone and Timezone Mono, published by HAL Typefaces.
